Naked Fried Catfish

Please allow me give you a little back story on why I love fresh whole fish so much. My Grandfather was a butcher and he’d fry fish every Friday, back then fillet cuts were not as popular as they are now. At that time he would bring home several kinds of fish many from Catfish, to Buffalo, and Red Snapper just to name a few. What I loved most about it is the fish actually taste better a sustainable fresh catch not farm raised.  He would take that whole fish clean it, cut it up season & coat it then deep fry in a cast iron skillet and it was the best thing I ever ate. Well fast forward to now 2021 here is my spin on cooking whole Catfish a fresh catch with out coating or dredge just a simple seasoning to taste renders the best natural flavors and that is it.
