Seafood Stew
Seafood Stew, this is one absolutely delicious recipe, flavor on top of flavor. It’s quick and easy not a heavy meal it won’t weigh you down and Keto friendly. For those of us who enjoy soups and stews add this to your collection. Be sure to use it and share.
Ingredients:
2 Tablespoons Olive oil
1/2 cup Celery finely chopped
3 Bay Leaf
1/2 tsp. dry Thyme
1/2 tsp. dry Oregano
1 Tablespoon dry Basil
1/2 cup or small can Tomatoes diced
1/2 cup Red Bell pepper finely chopped
1/2 cup Carrots finely chopped
1 cup Onion finely chopped
1/2 cup Leeks finely chopped
2 tsp. Garlic mined
1 Parsley bundle fresh for garnish
3-4 Ounce Can Tomato paste
3 cups Chicken broth
1 Salt & Pepper to taste
1 pound Mussels
1/2 pound Scallops
1/2 pound Shrimps
1/2 pound Cod
1/2 pound Calamari
1/2 cup Red Wine optional
1.) In a very large deep skillet heat the 3 tablespoons of olive oil, add the Celery, Carrots, Red Bell pepper, Onions, and Leeks. Sautee until tender for a bout 5 mins. Add garlic and stir.
2.) Now add in the Tomato paste, Thyme, Oregano, and Basil, firmly combine then pour in your Chicken Broth, diced Tomatoes, and Bay leaves stir well for a even consistency allow time for the vegetables and herbs to cook down over medium heat. add salt & pepper to taste as the flavors blend creating the base for your Seafood Stew.
3.) Add in seafood Mussels, Scallops, Cod, and last the shrimp cover with a lid cook until seafood is done and serve.
