Stuffed Mushrooms
The Best Homemade Stuffed Mushrooms. This is one of Americas favorite Seafood Restaurant appetizers. Every time I go to this well known Red Shell Fish logo restaurant, I order Stuffed Mushrooms they are an absolute must have menu item. My spin on this recipe has quite a few steps but still very easy to make, you have got to try this. This recipe makes 20+ Mushrooms.
Here are my ingredients:
3 cartons Mushroom caps
1 cup ready made Alfredo Sauce
¼ cup Parmesan Cheese
1 cup grated Monterey Jack Cheese
2 cups Garlic Seasoned Croutons
2 Tbs Butter
½ cup diced Onions
½ cup diced Celery
1 Tbsp Minced Garlic
1 cup Chopped Shrimp
¼ White Pepper
¼ Salt
½ cup beef broth
¼ cup of Parsley
To Cook:
Over medium heat add butter to a frying pan sauté celery and onions until tender, sprinkle in salt & pepper then add garlic.
Now pour in alfredo sauce mix well, add and fold in croutons allow to cook until you get the consistency of stuffing, add Parmesan cheese, pour in some of the beef broth to help soften the croutons then sprinkle some of the parsley and use the rest for garnish.
Simmer for 1-2 minutes so all of the flavors in the stuffing will come together. Remove stuffing and set aside.
Over medium heat lightly cook the shrimp and add stuffing back into the pan mix together add some of the Monterey Jack cheese and begin to stuff mushrooms.
Top Mushrooms with remainder of the Monterey Jack cheese, garnish with parsley then pour in the remainder of the beef broth the mushrooms, bake for 15 minutes and serve.
