Veggie Delight
1 cup chopped Zucchini
1 cup sliced Mushroom
3/4 cup Onion
1/2 cup black olives sliced
3 slices of provolone cheese
1 sub sandwich bun
salt & pepper
Sautee all the veggies together in a high heat skillet and cook until tender, then sprinkle salt and pepper to taste. Now with a spatula move all the veggies to the center of the skillet place 3 slices of provolone cheese the bread on top and allow it to steam. After the cheese has melted and the bread soften, slide the spatula under the veggies and press down on the bread with opposite hand turn over in one maneuver getting all or as much of the veggies in the bun as you can at one time and scoop the rest. Cut sandwich in half and enjoy.
